As a true Trini-Canadian that I am, I still love my food from back home. I was totally craving pigtail and rice and instead of using white rice, I used brown rice.
As for the pigtail, well of course it's fatty, but limited myself to 3 pieces only instead of 6 to 8 pieces that I usually have. I also took off as much fat as I can prior to boiling it. Kinda looks like what is shown below.
Tomorrow is 20 min HIIT Cardio where I'll be spending that time on the treadmill running and jogging. Lookin' forward to it. ;-)
